TYPES OF APPLE

For the making of natural cider, we use different types of cider apple either acid, sour or sweet. Today we estimate that there are more than 1000 varieties of local apple for cider in the Basque Country, even if 25 varieties are the most used in Gipuzkoa. In the appropriate mixture there’s the secret of a good cider, and the nuances granted from each cider house.
The 14 varieties of apple recommended by the Forum Deputee of Gipuzkoa and the Gipuzkoa Cider House Association are: Aritza, Errezila, Gezamina, Goikoetxe, Manttoni, Moko, Mozolua, Patzolua, Txakala, Udaremarroi, Urdin, Urtebi haundi, Urtebi txiki and Frantzes Sagarra or sour Green.
